For Vincent Couche, distance from Champagne’s traditional power centers has offered rare freedom to work on his own terms. A third-generation vigneron, he chooses not to dwell on family history, focusing instead on the present vitality of the domaine. When Vincent assumed control in 1999, he radically restructured both vineyard and cellar, beginning with replanting guided by famed soil expert Claude Bourguignon, whose résumé includes Domaine de la Romanée-Conti, Leflaive, Selosse, Dagueneau, and Chave. The family farms 32 acres across two distinct terroirs: seven acres of Chardonnay in Montgueux, with chalky, Chablis-like soils, and 25 acres—primarily Pinot Noir—in Buxeuil, on steep south- and west-facing slopes above the Seine. Biodynamics have guided the estate since 1999, with full Demeter certification achieved in 2008—the first in Champagne for both vineyards and cellar. Vincent harvests late, vinifies naturally, and makes wines without additions, expressing pure site, ripeness, and living soils.

2020 Domaine de la Bonne Tonne Dame de Couer ‘Woman of Hearts’

Anne-Laure Grillet and Thomas Agatensi became the seventh-generation caretakers of Domaine de la Bonne Tonne in 2019, the estate named for its original cadastral parcel. That year marked Thomas’s first solo vintage, quickly revealing his commitment to expressing Beaujolais’ top terroirs. The domaine has farmed organically since 2003, earned certification in 2006, and incorporated biodynamic preparations since 2007. The estate covers 6.5 hectares: four in Morgon, two in Régnié, and a small parcel of Beaujolais Blanc. Before returning home, Thomas worked five years as a solar panel engineer in Switzerland, then trained in the cellar with Bret Brothers in the Mâconnais. He and Anne-Laure took over from Marcel Grillet, inspired by natural wine pioneers like Jean-Louis Dutraive and Yann Bertrand. They farm organically, ferment with native yeasts, use semi-carbonic maceration, and add only minimal sulfur at bottling. Their cuvée Dame de Cœur Morgon honors three generations of women who shaped the domaine’s history.

Since 1843, the Aubron family has farmed vineyards around the town of Vallet, just outside Nantes near France’s Atlantic coast. Today, Jean Pascal Aubron tends 11 hectares within the renowned Grand Fief de l’Audigère, a historic lieu-dit celebrated for its distinctive gabbro soils of volcanic origin. These soils are ideally suited to Melon de Bourgogne, allowing the grape to express remarkable mineral precision while preserving its signature acidity. The resulting Muscadet de Sèvre et Maine sur Lie is crystalline, refreshing, and quietly complex. Grand Fief de l’Audigère is a classified vineyard whose wines have been prized for centuries. In the cellar, Jean Pascal Aubron follows traditional methods, transferring the wines midway through fermentation into underground, glass-lined tanks. There, they complete fermentation and rest on their lees for six to ten months, depending on the vintage. This patient élevage enhances texture and depth while maintaining the wine’s freshness, yielding a refined, terroir-driven expression of classic Muscadet.
