Jean Louis Denois, a seventh-generation winemaker originally from Champagne, brings a pioneering spirit to Limoux with his organic, experimental approach. Known for introducing grape varieties like Riesling and Gewurztraminer to southern France, Denois crafts unique wines that honor the ancestral method. Often described as a pioneer and rebellious winemaker who charges a path for others- he contimues to experiment and push the boundaries of his appellation. This Pinot Noir pet nat is naturally sparkling and fermented with native yeasts, showcasing his commitment to quality and tradition.

Disko is a venture by Sean Hogan, focused on crafting approachable, low-alcohol wines made from organically grown grapes across Santa Barbara County, California. As a winemaker, his aim with Disko was to create quality wines that remain affordable. They are blending the best of the old world with the fresh, vibrant climate of Santa Barbara County—one of the youngest yet most ideal wine regions. All of his wines are naturally fermented with native yeast, minimal sulfur, and aged in neutral vessels, embracing high acidity and low alcohol. Pure, unaltered, and elegantly simple. 2023 Les Vignerons d’Estezargues “Taparas Blanc”

Les Vignerons d’Éstezargues is a cooperative in Côtes du Rhône, uniting 12 growers dedicated to organic and natural winemaking. Founded in 1965, this women-led co-op has become known for its additive-free wines and minimalist approach, a style that has gained popularity worldwide. Under the leadership of CEO and winemaker Armelle Rouault, with Anna Tyack heading sales, the team crafts wines that authentically reflect the terroir of the region.

Tasting Notes: With aromas of peach and white flowers, this wine offers a rounded and refreshing profile, making it an ideal pairing wine. Perfect by itself or pair with chicken, turkey, grilled whitefish and oven roast new potatoes.



2022 Jean-Marc Burgaud Beaujolais “Les Vignes de Latignie”

Jean-Marc Burgaud is renowned in Beaujolais for his dedication to both vineyard work and cellar precision. His Gamay vines in Morgon’s Côte du Py vineyard, planted between 1940 and 1974, are tended with meticulous care, using traditional methods like hand harvesting and horse-drawn plows to maintain the vineyard’s natural balance. Made using semi-carbonic maceration, this Beaujolais captures the grape’s natural freshness and vibrant character, producing wines with distinct elegance and complexity.

Tasting Notes: Floral and fruity with hints of ripe cherry and violet. Ideal for pairing with roasted turkey, ham and mashed potatoes.
